NOAA Paleoclimatology/NCDC
This month Earthscape adds a series of educational features from NASA’s Earth Observatory to the collection. Of particular interest is an Introductory Course on Paleoclimatology and an Introduction to Climate Modeling.
Paleoclimatology is the study of past climate, for times prior to instrumental weather measurements. Paleoclimatologists use clues from natural "proxy" sources such as tree rings, ice cores, corals, and ocean and lake sediments to understand natural climate variability.

The Education and Outreach part of the NOAA Paleoclimatology site contains several links that explain how scientists collect climatic data from the past, before the days of the thermometer, barometer, rain gauge and other weather instruments. Resources include slide sets, external links, a Climate TimeLine Information Tool, and a page in Spanish.
